And yes, as you may know, I love good food! And I’m a big fan of pizza, when it’s not too greasy, when the dough is thin, and when it’s obviously gluten free. So here is the recipe that I tested and that worked really well for a nice gluten free pizza.
To make your dough you’ll need:
- 200 g of gluten free bread mix from Schar and a little more for resting. (You will understand in STEP 3)
- 20 cl warm water
- 1 teaspoon of sugar
- 5g gluten-free yeast
- 1 tablespoon of olive oil
- 1/2 teaspoon salt
STEP 1: In a first container, mix the warm water, yeast and sugar. Allow to foam for a good 10 minutes.
STEP 2: In another bowl, mix the flour, salt and oil. When it’s good, add your preparation from step 1, then if you have a whisk for kneading, use it to get a nice dough. Otherwise, you will have to use your hands: knead well for 10/15 min to get a nice dough.
STEP 3: When your dough is homogeneous, add a little more flour on the whole without kneading and cover your preparation with a slightly damp cloth. Let it rest for a good hour near a radiator.
STEP 4: Your dough should have swollen! Preheat your oven to 200 degrees. Put your dough in the middle of two sheets of greaseproof paper and roll it out with a rolling pin. When your dough seems thin enough or thick enough (depending on your taste), cut the edges with a knife to make a nice round gluten free pizza!
STEP 5: Garnish with whatever you like. I love a pizza with tomato sauce, mozzarella and a little salad when it’s all cooked! Nothing complicated, but it’s so good! And I put it in the oven for 25 minutes!
