I was lucky enough to go to Argentina for a few months, where I was able to try many really delicious gluten-free restaurants. Among them, I loved their gluten free Milanese, which I wanted to do again at home.
The recipe is really very simple to make and does not require many ingredients. I propose two recipes, a very simple gluten free Milanese escalope recipe, then a recipe where we decided to grill it with mozzarella and ham on top.
Let’s do it!
For 4, you will need:
- 4 veal or turkey cutlets from the butcher’s is much better!
- 3 whole eggs (add more if needed)
- 80g rice flour
- 100g gluten-free breadcrumbs. I took Vali Bio’s, but it’s possible to make it alone. I give you two recipes right here.
- 4 slices of white ham
- 2 mozzarella
- 2 tablespoons of vegetable oil
Now it’s your turn to follow the few simple steps to make beautiful gluten free Milanese cutlets!
STEP 1: Take your veal or turkey escalope, and crush it well by hand to make it thinner.
STEP 2: Take three different containers: in the first, put rice flour, in the second, your beaten eggs, and in the third your gluten-free breadcrumbs.
STEP 3: Heat a frying pan with your vegetable oil. If you wish to gratinate it, preheat your grill oven to 200°.
STEP 4: Dip your cutlet in rice flour, put some all over your cutlet, then dip it in the bowl with the eggs. Finally, cover your cutlet with the gluten-free breadcrumbs.
STEP 5: Repeat this operation for all your cutlets. Do not hesitate to add 1 egg, or flour or breadcrumbs, if necessary.
STEP 6: Fry your gluten free Milanese on a hot pan for 2 minutes on each side. If you don’t want to gratinate it with mozzarella cheese, cook 5 minutes on each side. You should have a good Milanese escalope.
STEP 7: If you want to gratinate it, nothing very complicated. Remove your cutlets from the heat and place them in an oven dish. Put a slice of ham and 3 slices of mozzarella cheese on top. Bake for 10 minutes in the oven until gratinated as you wish.
All that’s left to do is taste it! Accompany your gluten-free Milanese escalope au gratin with mozzarella and ham with good gluten-free pasta with tomato sauce or green salad.
