Surely you all must know about bagels? It’s rare to find gluten free bagels, that’s why we’re sharing a gluten free bagel recipe that’s super easy to make!
A bit of history… It is a bread that originated in Austria. It is a local baker who decided to thank the king of Poland for saving his country. You will probably wonder why there is a circle in the center? Well it’s not complicated. The king of Poland was a very good horseman, and that’s why the bagel has a hole in the center to make it look like a stirrup. By the way, stirrup in Austrian is called “beugel”! A nice little story, isn’t it?
So let’s get started with this great gluten free bagels recipe.
For 10 bagels, you are going to need:
- 450 g of gluten-free all-purpose flour that you can find in supermarkets all over
- 75 g potato starch
- 90 g rice flour
- 75 g buckwheat flour
- 10 g dry yeast
- 2 tablespoons of fine salt
- 2 tbsp xanthan gum
- 1 whole egg
- 3 separate white and yellow eggs
- 180ml of olive oil
- 375 ml of hot milk (with or without lactose) and 1 tbsp more
- 2 tablespoons of poppy seeds
- 2 tablespoons of fleur de sel
Follow all the steps, you’ll do it like a chef!
STEP 1: Start by sifting the flours and starch. Then mix in a bowl with the yeast, salt and xanthan gum.
STEP 2: In a bowl of an electric mixer (or by hand, but you’ll have to be energetic), mix the whole egg and the 3 egg whites, the oil and the milk. Mix at medium speed for about 3 min 30. Then gradually incorporate your preparation of STEP 1. Beat until you have a very smooth and homogeneous dough.
STEP 3: Put flour on your work surface. Then start kneading your dough for a little while, until it seems to be kneaded enough to divide it into 10 portions.
STEP 4: On the same floured worktop, make the 10 portions into fairly long logs (about 24 cm long), then glue the ends together with a skin of water to form a ring.
STEP 5: On a greased baking tray, place your gluten free bagels, cover them with cling film and let them rest for 45 min/1h.
STEP 6: Preheat your oven to 200°. After greasing two baking trays, put baking paper on them.
STEP 7: The most complex step comes: heat boiling water in a pan, and dip your gluten free bagels in the water for 1 minute. Then take a skimmer to take out your bagels and put them on the baking sheets.
STEP 8: Mix your egg yolks and milk and brush your bagels. Then add your poppy seeds and fleur de sel.
STEP 9: Bake for 25 minutes in the oven and then let cool on the grill.
