A recipe for gluten free galette des rois? You know, the typical french king cake ! Yessss, frangipane is a very French recipe, and so delicious. It is not that complicated, believe me. Let’s travel together to France and cook with me this really nice gluten free galette des rois !
A bit of history!
The “galette des rois” is mostly eaten during the Epiphany period, it’s a Christian feast. This event celebrates the arrival of the Three Wise Men after the birth of the baby Jesus. It is usually celebrated on January 6, but I confess that I love this french king cake so much that I eat some all year round.
So for the recipe, I would advise you to go buy 2 gluten free puff pastes in an organic shop near you. It’s not that easy to make your own puff pastry, but I promise you that I will make it, and the day I do, I’ll give you my recipe! So, let’s get back to our rides. For the gluten free galette des rois, you will need:
Ingredients:
- Two gluten free puff pastries
- 100 g caster sugar
- 120 g almond powder
- 30 g maizena (optional)
- 120g butter (or 80g margarine if you prefer lactose free): try to take it out a little beforehand from your fridge so that it is a little soft, it will be easier to make the recipe!
- 2 eggs + 1 to brown the top of the cake. You know, to make the super crispy part ! hummm I can’t wait to eat it.

The method:
STEP 1: Start by preheating your oven at 210°C.
STEP 2: In a bowl, mix the sugar, butter, almond powder and two eggs (and Maizena if you want to add more to make the dough thicker). The dough must be homogeneous. If it is too liquid, add almond powder or a little Maizena until it is thicker. If it is too liquid, it may come out of your french king cake … or make the dough very soft.
STEP 3: Spread your first gluten free puff pastry on a sheet of baking paper.
STEP 4: Take your mixture and spread it on the gluten free puff pastry. Leave a small strip at the end, as if it were a pizza. Don’t forget to slide the bean into the gluten free french king cake, preferably near one edge!
STEP 5: Take the second gluten free puff pastry and place it on top of the other gluten free puff pastry to cover the mixture.
STEP 6: Fix the edges of the two doughs together, so that the frangipane does not come out of the mixture. Tip: Wet your fingers a little bit to stick the edges together, it will be easier!
STEP 7: For the pro of the pro, but the beginners, try it anyway !! Delicately, with the tip of a knife, draw diamonds on the top of the dough, without piercing it. Obviously!

STEP 8: Take the third egg. Separate and keep the yolk from the white in two separate containers.
STEP 9: Dilute the yolk a little bit with water and mix. Using a brush or a tablespoon, spread the yolk on the wafer. Don’t put too much, otherwise it will smell like an omelette. If you don’t put enough, your gluten free galette des rois may be a little white! It’s a good dosage. Now it’s your turn!
With the white, brush where you closed the two gluten free puff pastries together. This little operation will seal the whole thing and prevent any disaster from happening!
STEP 10: Bake for 20 to 30 minutes without opening the oven. And there you have it, you’ve just made this great gluten free galette des rois recipe !

this looks and sounds delicious – I had a slice of Galette des Rois (complete with figurine of a King) which had been prepared by a French friend. I am trying this recipe for a friend that cannot tolerate Gluten so sourcing the products and hope for success!
