Why not try a gluten free mookie, right? But you might wonder what is a mookie? Well, it’s a cookie – moist! Yes… and it’s really to die for. This recipe is made with a chocolate spread. I’ll try to make a slightly lighter recipe soon if you like. Leave me a comment and I promise I will make a 100% dark chocolate mookie recipe, so you don’t feel too bad!

In any case, for the gourmands who love (like me) the chocolate spread, you’ve come to the right place!

Since I live in Barcelona and I finally have MY own kitchen, I have the place to try gluten-free recipes, very easy and really fast. This gluten-free mookie recipe is one of them. Just a few ingredients, 6 minutes of preparation, and it’s done.

So for 4 and 5 gluten free mookies, you’ll need:

  • 1 egg
  • 70g of spread
  • 50g of rice flour
  • 10g of almond powder, or starch
  • 20g of dark chocolate
  • 4 g of gluten-free yeast
  • 1 pinch of bicarbonate of soda
  • Olive oil and 1 tablespoon of gluten-free flour (flour of your choice)

STEP 1: Preheat your oven to 180°.

STEP 2: To make your gluten free mookie even more airy, I suggest you to make your mookie with snow white.

STEP 3: Then mix your chocolate spread with the yolk, and then gently add your egg white.

STEP 4: Then add the flour and the starch, the bicarbonate of soda and the yeast. Then mix well.

STEP 5: Cut your dark chocolate into small chips and add them to your preparation. If you have a little time, let the dough rest for 30 minutes. Otherwise it’s not too serious, you can continue the recipe without rest.

STEP 6: To avoid using baking paper, I suggest you to put on a baking tray or in a dish: brush your dish with olive oil and then add your gluten-free flour well spread out. Then make 4 to 5 heaps with your gluten-free mookie dough.

STEP 7: Bake for 10 min. You can bake for 8 minutes if you want to have a bit of fondant instead of softness!
