I received some nut flour the other day and I tried several recipes and this is one of the best I have made. How about a gluten free nut cake? It was really delicious! Everyone who tried it loved it, really. So, now it’s your turn to try it.
Here are the ingredients you’re going to need:
- 600g of walnuts with shell, 250g of walnut kernels or, and that’s what I made, 100g of walnut flour…
- 6 eggs
- 100 g melted butter
- 100 g caster sugar
- 1 pinch of salt
STEP 1: If you have decided to take whole nuts, then take out the walnut kernels, and break them into pieces, to make like powder. You can leave a few pieces unbroken, it gives your gluten free nut cake a little crunch! Or use your own nut flour.
STEP 2: In 2 more bowls, break the eggs, separating the yolks from the whites. Then preheat your oven to 180°, and butter your cake tin.
STEP 3: In the bowl of egg yolks, mix your yolks with the sugar until the mixture whitens a little. Add the melted butter and continue to mix. Then add your walnut powder or walnut flour and mix.
STEP 4: In another bowl, whisk your egg whites with a pinch of salt. Then add your egg whites to your mixture of egg yolks, sugar, butter, and walnut powder.
STEP 5: Pour the mixture into a buttered cake tin and bake at 180° for 45 minutes.
Let it cool down and enjoy! It’s delicious with a little tea or coffee, you’ll love it, I’m sure!
