I’ve been testing several lactose free and gluten free burger bun recipes for a long time, and here’s the recipe I’ve adapted for you!
It’s not very complicated and it doesn’t take much time, but you have to follow the recipe so you don’t do it wrong!

For 4 gluten free bun, you will need:
- 150g rice flour
- 150g chickpea flour
- 50g potato starch
- 1 egg
- 150 ml vegetable milk
- 12g gluten-free baker’s yeast
- 1 tbsp powdered sugar
- 1 tablespoon of salt
- 20g melted butter or margarine
- Some sesame seeds for the top of your bun
STEP 1: For the first step, nothing complicated, you will have to preheat your oven at 30 degrees for at least 20 minutes. This heat will allow the dough to rise, you will understand later why 🙂
STEP 2: Now take a saucepan and warm up the milk (not too hot not too cold, just in the middle), then take it out of the saucepan and add your baker’s yeast. You will see, a reaction will occur. Let it cool down.
STEP 3: In your food processor or in a bowl, mix rice flour, chickpea flour, potato starch and then add the sugar and salt.
STEP 4: Make a well (a hole in the center of your flour preparation), put your whole egg in it. Mix well. Then add your milk with the yeast, and melted butter. Once again, mix! You should have a fairly homogeneous dough. If it is too liquid, add some rice flour, if it is too dry, add middle warm water. Go step by step so that you don’t miss your preparation.
STEP 5: When your dough feels smooth, flour your hands and form 4 balls of gluten free burger bun.
STEP 6: Go to the oven that you have preheated to 30°. When your oven is hot, and turned off, let your buns rest for a good hour in it. You will see, if you have followed the steps correctly, your buns should double in volume after a good hour of waiting.
STEP 7: Take your buns out of the oven, and preheat your oven to 180°. Brush the top of your buns with egg yolk or vegetable milk, and add a few sesame seeds. Then put them in the oven for 15/20 minutes, checking every 5 minutes to see how your lactose free and gluten free burger bun are getting bigger.
ETAPE 8: When cooked, you can cut them in half and garnish them with whatever you like. I have some cool recipes for that. See you, right here!
