The gnocchi, hummm I love it, and even more so when it’s gluten free gnocchi! And you, how do you like it? Here is a recipe that I found and tested several times: very simple and soooo tasty ! And besides being gluten free gnocchi, they’re also vegan!
Now, let’s cook!
Ingredients (for 2 persons)
- 230 g sweet potatoes, cooked and mashed
- 1 cup gluten-free all-purpose flour
- 1/4 cup sweet potato flour or potato starch
- 1/2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
You can add sweet potato flour as needed.
STEP 1: Combine gluten-free all-purpose flours and potato flour.
STEP 2: Add the mashed sweet potato in a large mixing bowl. Add the flour mixture, nutritional yeast, pepper and salt. Mix until well blended together. Your dough should still be slightly sticky.
STEP 3: Spread the tapioca flour on a large work surface. Flour your hands and roll the dough into a ball and cut it in half. Roll each portion into a log. Cut into a bite-size piece.
STEP 4: Lightly roll each piece in your palm into a ball and press with a fork on part of your gnocchi (You know, to make it look like a typical gnocchi). Do this step until you run out of dough.
STEP 5: Bring a pot of salted water to the boil. Add the gnocchi and cook them until they float to the surface.
STEP 6: Then, I would recommend to fry them a bit in a pan with some oil olive. You can add what ever side you want to it. What I love is with curry and coco milk. Very tasty, and soooooo yummy!
