I’m very happy to share with you this recipe for black rice salad with, carrots, feta & beans that is just amazing and above all SUPER healthy and tasty… It’s rare to eat black rice, and yet it’s so good for your health.

For this recipe for 2 persons, you will need:
- 120g of black rice from Smartfooding 10% discount from 30€ purchase with the code SMARTGL
- Half a square of feta cheese
- 3 carrots
- A few beans
- Olive oil, salt and pepper
- 1 shallot
STEP 1: For this recipe, start by cooking your black rice in water for 40 to 45 minutes.
STEP 2: While waiting for the rice to cook, cut your carrots into thin strips and put them in the oven for about 20 minutes with olive oil, salt and pepper.
STEP 3: Finely chop your shallot and feta cheese and set aside.
STEP 4: Cook your beans in boiling water for 3/4 min then remove the skin to recover only the heart of the bean.
Presentation: in a round and hollow plate, start by putting your black rice, then your baked carrots on top, your feta, and your beans. Simply season with olive oil (for more flavor, you can add a little sesame oil, and pine nuts). Add salt and pepper and enjoy this great black rice salad with carrots, feta & beans.
