So, then, to make eight donuts, you’re gonna need:

  • 125 grams of gluten-free baking mix.
  • 125g gluten-free bread mix
  • 10g gluten-free baker’s yeast
  • 25g of margarine
  • 50g cane sugar
  • 150 ml of vegetable milk. I love almond milk!
  • 1 pinch of salt
  • 1 teaspoon vanilla powder
  • 1 teaspoon orange blossom
  • 8 squares of dark chocolate, or 2 applesauce compotes
  • Powdered cinnamon and cane sugar for small finishes

STEP 1: Cool your milk and mix it with the yeast and let it rest for 10 minutes.

STEP 2: Take another bowl, and mix the flours, sugar, salt, and vanilla powder. Then melt the margarine, which should remain lukewarm.

STEP 3: In your dry preparation (flour, sugar, salt, vanilla), make a well in the center, and pour in the milk/yeast, margarine and orange blossom.

STEP 4: Important step: Knead the dough for 10 minutes. Your hands must be floured! Above all, take your time to knead the dough, I have tried several recipes, and the secret is to knead the dough well.

STEP 3: When your dough is smooth and homogeneous, cover it with a warm damp cloth, then let it rise near a radiator or in the sun for 1:30. The dough should double in volume.

STEP 4: After your dough has rested, knead it again for a good 5 minutes. Make 8 small balls of dough, which you will let rise again for 15 minutes with a warm cloth placed over your gluten free and vegan donuts dough balls.

STEP 5: Take each ball of your dough and press your thumb into it to fill it with chocolate or applesauce, then close the ball of dough tightly so that your filling is well inside. I preferred to make them with applesauce by the way!

STEP 6: Cooking: heat some frying oil, and pour in 2 by 2 your donuts to be fried for 3 minutes on each side. As soon as you see that your donut becomes a little orangey and crispy, it’s ready. Place them on a paper towel, then put them in a bowl with sugar and cinnamon to coat your gluten and vegan donuts.

There you go, that’s not bad, is it? I’m sure you’ll love this recipe!

See you soon!
