One other typical French recipe is the gluten free quiche lorraine ! Soooo easy and soooo good!! Welcome back to France savor !
I have tried many different ways to create a gluten free tart, and this one was the easiest
Ingredients for 1 quiche:
- 250 g rice flour
- 50G of Maizena
- 1 teaspoon xanthan gum (optional)
- 140 g butter in pieces
- 1 egg
- 1 pinch salt and pepper .
For the filling:
- 200ml of fresh cream
- 100g of grated Gruyère cheese
- 1 tablespoon butter
- 2 eggs
- 200 g bacon
- 1/2 onions
- Salt, pepper
Method:
STEP 1: In a bowl of a blender, mix the flour, maizena, salt, pepper and gum: Activate for a few seconds then add the butter in pieces and then activate again until a sandy preparation is obtained.
STEP 2: Add the egg and 2 tablespoons of water, then mix again to obtain a very soft dough
STEP 3: Cover with cling film and place in the refrigerator for at least one hour
STEP 4: Preheat the oven to 200°C. Then put the gluten free dough for a few minutes to pre-cook.
STEP 5: Chop the cheese and cut the onion
STEP 6: In a bowl, combine the eggs, cream and cheese. Season with salt and pepper.
STEP 7: First pour the bacon and onion over the dough and then the preparation, very gently.
STEP 8: Bake in the oven for 40 to 50 minutes (depending on the oven).
And enjoy this really good gluten free quiche Lorraine !!
You can add anything you want in this quiche, goat cheese, to make vegetarian, or vegan cheese to make it vegan. Anything you want!
