Yes, we are often used to not being able to find the right pie dough in the store, or it’s often complicated to make it at home. Here is a very simple recipe that works every time! So, hurry to your kitchen to make a beautiful homemade gluten free pie dough!

For that, you’re going to need:

  • 150g of rice flour
  • 100g buckwheat flour
  • 1 pinch of salt
  • 5 tablespoons of olive oil
  • 1 egg
  • 8 tablespoon of water

The preparation for a D30 mould, here are the steps to follow:

STEP 1: In a bowl, mix the two flours and a pinch of salt. Add the olive oil and mix. Then add the egg.

STEP 2: Add the water little by little to obtain a smooth and homogeneous paste. Knead for a good 10 minutes!

STEP 3: Spread your dough on floured parchment paper to make a nice circle about 35 cm diameter. Place the gluten free tart dough in a D30 mould and make small holes with a fork.

Concerning the baking, it will be done at 180° and will depend on your filling.

Here is the filling that Gluten Libre has chosen for today:

Green asparagus tart, hummmm you’ll see it’s delicious and perfect for this April/May season!

  • 400 g asparagus
  • 80 g grated Parmesan cheese
  • 1 plain yoghurt with or without lactose (I use ewe’s milk yoghurt)
  • 3 eggs
  • 20 cl of fresh cream, with or without lactose (I use soya crème fraiche)
  • 5cl of nutmeg
  • Salt and pepper

STEP 1: Cook the asparagus in hot water for about 10 minutes. It has to remain firm and then cut them into 3 cm pieces, or like me, leave them uncut, to superimpose them on our gluten-free tart.

STEP 2: Preheat our oven to 180°. Take a bowl, and mix the eggs, cream, yoghurt, nutmeg, pepper and salt.

STEP 3: Sprinkle your tart base with 50g of parmesan, add your preparation of STEP 2 and then add your asparagus on top. Then sprinkle with the remaining 30g of parmesan.

STEP 4: Bake for 35 minutes !

There you go, so how about that? A gluten free pie dough that simple, there’s nothing better.
