I had a lot to do last weekend, but I still wanted to bake a little something! And I thought, why not try a gluten free lemon cake? So, here’s a really simple recipe that’s really quick and delicious! This recipe looks more like lemon financials, it’s quite light and really good, believe me!

So here are the ingredients you’re going to need:
- 80 grams of melted butter
- 60g of sugar
- 2 eggs
- 60g corn starch
- 60g rice flour
- 10cl lemon juice
- Some yellow and green lemon zest. If you want to really taste like a lemon, put 1 teaspoon of zest from each lemon, or a little less!
- 1 teaspoon of gluten-free baker’s yeast
STEP 1: Heat your oven to 180°.
STEP 2: In a bowl, mix all the ingredients, yes, yes I said all the ingredients! Mix well. You’ll see, it will make a strange texture and it will be quite liquid, but it’s NORMAL! Really 🙂
STEP 3: Butter a cake pan, and pour your mixture into it. Bake for 40 min in the oven at 180°.
If your gluten free lemon cake is toasted a little too quickly, cover it with aluminium foil while baking!
