You’ve been waiting for the famous gluten free and vegetarian nuggets recipe! A beautiful culinary discovery that will surprise you! And yes, this time these nuggets are made with cauliflower, who would have believed it? I had already tested this recipe when I was in Asia with one of the chefs of a gluten-free restaurant in Bali. To make it even tastier, I adapted it just for you!

For 4 people, you will need:

  • A cauliflower from 700 to 800g
  • 110 g rice
  • ½ onion
  • 3 tablespoons of chickpea flour
  • 2 tablespoons of corn flour
  • 40g of parmesan cheese
  • 1 egg
  • 1 tbsp of curry
  • 1 teaspoon of espelette pepper
  • Salt, pepper, flat parsley

STEP 1: The first step is to bleach your cauliflower. To do this, cut it into florets and cook in boiling water for 8 minutes. They will not be completely cooked and this is normal!

STEP 2: Then, in another pot you will have to cook your rice.

STEP 3: Then mix your cauliflower with half an onion and parsley. It is normal that the result is not perfect.

STEP 4: In another bowl, mix together the rice, egg, spices, flour and parmesan. Then mix it all with your cauliflower preparation.

STEP 5: The most important moment: the preparation of the nuggets. To do this, advice from the chef: put cornflour on your work surface, and put some on your hands. Then take some dough and form nuggets. Cover them with cornflour.

STEP 6: Cook them on a hot pan for 5/6 min on each side. Don’t hesitate to use olive oil to make your gluten free and vegetarian nuggets even crispier.
