As Valentine’s Day approaches, I decided to share with you the delicious recipe for the indescribable gluten-free chocolate fondant with rice flour! To your aprons!

To make 4 flowing chocolate hearts you will need:

  • 150 g dark chocolate
  • 50g of butter with salt crystals
  • 60g of sugar
  • 2 eggs
  • 25g of rice flour

STEP 1: Preheat your oven to 180 degrees.
STEP 2: Melt the chocolate (keeping 4 squares of chocolate aside) with the salted butter over low heat in a double boiler. Stir regularly so that the chocolate does not stick.
STEP 3: In a bowl, beat the eggs with the sugar, then add the rice flour, continue to mix before adding the chocolate and melted butter mixture. Continue to mix until you get a homogeneous dough.
STEP 4: Pour the mixture into 4 different molds and add a square of chocolate in the center.
STEP 5: Bake your 4 gluten-free chocolate fondant preparations in the oven at 180 degrees for about 7 minutes. Watch the baking process carefully.

Let it rest for a few minutes before unmoulding your cakes!

For the most greedy, you can add a good homemade custard. For this, you will need:

  • 1L of milk with or without lactose
  • 6 egg yolks
  • 1 vanilla bean
  • 100g of sugar

STEP 1: In a saucepan over low heat, add the milk and split the vanilla bean lengthwise. Remove the seeds and pour them into the milk along with the two halves of the bean.
STEP 2: In a bowl, blanch the egg yolks and sugar, stirring vigorously.
STEP 3: Then add the boiling milk to the bowl and gently beat the mixture.
STEP 4: Over very low heat, put the preparation back into a saucepan until the mixture is the consistency of a topping.

And tadaaa a good custard to sublimate your gluten-free chocolate fondant!
