To travel to England you have to know the recipe of the famous gluten free fish & chips, don’t you? So, to avoid that it is a little too fat by passing by the deep fryer, here is a simple and super good recipe to make in the oven.

For two people quite greedy, you will need:

  • 400 grams of potatoes
  • 1 egg white
  • 2 g paprika
  • 2 g salt
  • 8 ml rapeseed oil
  • parchment paper
  • 300 g of cod fillet or other white fish of your choice (to know the cooking, ask your fishmonger)
  • 1 egg white
  • 65 ml partly skimmed milk
  • 30 g corn starch (Maizena)
  • 30 g flour/corn meal (polenta)
  • 1 g cayenne pepper
  • vegetable oil spray
  • 1/4 cup Tartar Sauce


Preheat the oven to 260°C/500°F. Place parchment paper on a baking sheet and oil lightly.

STEP 2: Put the potatoes with the skin on in boiling water.

Oven Fries: when the potatoes are cooked, cut them half to half lengthwise, then cut each half into 4-6 equal sized quarters to obtain an equal cooking time.

In a soup plate, beat the egg white with 2g of paprika and salt. Add the potato quarters and coat them well with this mixture. Arrange the quarters on the baking sheet in a single layer, without packing them down, as we want them to roast and not steam.

Place the baking sheet in the lower part of the oven. Bake 15 min, then turn the potatoes once, then continue baking for another 15 min.

For the fish: Cut the fish into portions.

Prepare 2 shallow plates: put the egg white and milk in the first plate, then beat them lightly. In the second plate, mix together the starch, cornmeal, spices (chili pepper, 1 g paprika), and a pinch of salt. Immerse one piece of fish at a time, first in the dry mixture, then in the egg mixture. Shake well and let the excess drain off before coating the piece again in the dry mixture. Turn the pieces over to coat them well on both sides.

Place the pieces on a rack in a roasting pan. Spray each piece with oil.

Place the pan in the upper part of the oven and bake 15 minutes.

Take the fish and potatoes out of the oven. Add salt to taste. Serve immediately with the tartar sauce on the side.

Tip to get everything ready at once: first bake the potatoes in water, then, when done, bake the potatoes on one side in the oven for 15 min (STEP 5) and during this time prepare the fish (STEP 6). Then when you turn the potatoes over for another 15 minutes (STEP 5), insert the fish baking sheet into the oven for another 15 minutes. (STEP 8)
