Do you have any idea of what is a “soupe à l’oignon” or gluten free onion soup? It is a typical meal from France ! Let’s cook it together. It is so easy, and sooo tasty!
This kind of simplicity can be made from anywhere in the world! So let’s become a French cooker for one day!
For 6 persons:
- Time of prep: 20 min
- Time of baking: 1h10
Ingredients:
- 500g of oignons
- 70g of salt butter
- 2 L Chicken stock
- 10 cL of dry white wine
- 12 small gluten free toast
- 200 g of grated emmental cheese
- 1 tbsp of maizena or gluten free flour
- 1 sprig of thyme
- 1 bay leaf
- Salt and pepper
- Additional: a little of nutmeg
Method:
STEP 1: First, peel and finely slice the onions.
STEP 2: Melt the butter in a large frying pan. Add the onions and let them melt gently until they turn a beautiful golden color. Mix very regularly.
STEP 3: Add the flour in rain, mix. Pour in the white wine, then add the broth, thyme, bay leaf, salt and pepper and a few pinches of nutmeg (if you have).
STEP 4: Bring to a boil and simmer for 45 minutes, covered.
STEP 5: Preheat the oven grill. Put 2 slices of gluten free bread in the bottom of 6 bowls. Fill them with soup and sprinkle with cheese. Spend a few minutes under the grill to grill. Serve immediately.
Suggestions: Onions must be well caramelized, not burned. This is what gives taste and color to the broth. The bread can be roasted beforehand and rubbed with a clove of garlic.
