Um, it’s summer, and we want to eat fruit and good food. But we also want to enjoy ourselves without spending hours cooped up in our kitchen. So here’s the recipe to make a good gluten free yogurt cake, to which we add some good strawberries at the end.
We’re avoiding grams and liters today. Our measurement tool? Yogurt! It’s up to you to see how many you are, 1 yoghurt is equal to two rather greedy people. If you are 4, double the volume. Let’s go, let’s go!
For that good gluten free yogurt cake, you’re gonna need:
- A yogurt (Indeed, it’s the main product in the recipe!). For me, I prefer to avoid cow milk, so I opted for a sheep yogurt.
- A yogurt of almond powder
- 1.5 yogurt of rice flour
- 1/2 bag of yeast or a whole bag, it’s up to you how much you want your yogurt cake to rise!
- 1.5 yogurt of brown sugar, white, brown, as you wish!
- 2 eggs
- 1/2 yogurt of virgin oil if possible
- 10 beautiful strawberries
Let’s do it! You’ll see, it’s SU-PER simple!
STEP 1: Preheat your oven to 180°, and empty your yoghurt into a salad bowl.
STEP 2: As we said above, the yoghurt pot will serve as our measuring tool. Then, pour into the bowl, a yogurt of almond powder, 1.5 yogurt of rice flour, and the yeast. Mix well.
STEP 3: Add the sugar, oil and eggs. Mix everything well.
STEP 4: Either you want a plain gluten free yoghurt cake or you want to add some fruits. For this recipe, I have chosen strawberries, the fruit of the summer season! So, what I did: I cut 4 nice strawberries into small pieces and added them to my preparation.
STEP 5: Butter a cake pan and pour your mixture into it. Bake for 30 minutes and voilà! Just add a few strawberries cut in half on top, a little icing sugar for the most greedy, and you’re ready for a delicious tasting!
