Are you looking for an original idea for a change from the basic gluten free bread? Here it is! Would you like to try a gluten free banana bread? You’ll love this recipe. I’m going to give you a normal version, and a slightly lighter version, recommended by nutrition professionals. It’s up to you!
For 14 nice slices, or a whole loaf of bread, here’s what you’re going to need:
- 100 grams of rice flour
- 50 g corn starch
- 50g buckwheat flour
- 30g chestnut flour (or 30g gluten-free oat flakes for a lighter and cheaper version).
- 3 large ripe bananas
- 2 eggs
- 50g soft butter (or 50g almond puree, for a lighter version)
- 50g of sugar (or 60g of agave syrup for a slightly lighter version)
- 2 teaspoons of gluten-free baking yeast
- 1 pinch of salt
So let’s stay focused:
STEP 1: Take a bowl and mash your bananas with a fork. Then add the eggs and your soft butter or almond puree. Mix well.
ETAPE 2: In another bowl, mix your rice flour, corn starch, buckwheat flour, chestnut flour (or your oat flakes). Add your yeast and a pinch of salt.
STEP 3: Preheat your oven to 175°. Add your banana mixture, eggs and butter to your dry mixture. Mix everything well, and finally add your sugar or agave syrup. Mix everything together to have a homogeneous dough.
STEP 4: Butter a bread pan, and put your preparation inside. Bake for about 45 minutes in your oven at 175°.
