What about a typical gluten free carrot cake recipe to try at home. It is so tasty and so yummy that you will want to eat some of it every day!

Let’s follow this typical gluten free carrot cake recipe step by step.

For the ingredients, you will need :

  • Some butter for the greasing
  • 225 g gluten free flour
  • 2 large eggs
  • 100g brown sugar
  • 125 ml of sunflower oil
  • 1 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 eating apple
  • 200 g of carrots
  • 1 orange, zest and juice
  • 1 handful of sultanas
  • 50g of walnuts (optional)

What you will need for the icing are the following ingredients:

  • 75 g of butter
  • 100 g icing sugar
  • 1 orange, zest only
  • 75 g of cream cheese
  • 50g walnuts

STEP 1: preheat the oven to 190 °C (375 F)/ gas 5. Grease a cake tin (approx. 20 cm) with butter, line the bottom with baking paper and sprinkle the sides with gluten free flour.

STEP 2: Take a bowl, and lightly beat the 2 eggs into it. Then add flour, and your spices (ginger and cinnamon) the sugar and oil, and mix to combine all of it.

STEP 3: Peel and grate the apple (after having taken off the skin and heart of the apple) and carrots, then stir into the mixture along with the orange zest and juice and sultanas. Roughly chop and add the walnuts, if using.

STEP 4: Pour the mixture into the prepared cake tin, then place on the middle shelf of the oven for 30 to 35 minutes, or until it has a gold color. Leave the cake to cool in the tin for around 5 minutes, before turning it out onto a wire cooling rack to cool completely.

STEP 5: Meanwhile, let’s start making the icing. Beat the butter, icing sugar and most of the orange zest until it looks pale and smooth, then stir in the cream cheese until it perfectly combined.

STEP 6: Once cooled, decorate the cake with the icing. Lightly crush the walnuts and add it on your cake. Finish with a grating of orange zest, then serve.

A little plus: When your carrot cake is cooked, cut the cake in half to make a top part, and the base (I don’t know if I’m very clear!). Look at the picture you’ll understand better :)) Then, add some of your icing in between and put back the top of the cake on the base and the icing. And then of course, add icing on top of your entire cake ! It will make it even smoother.
