Perhaps you must know French fougasse? Well, it’s an adaptation that the French have made to fit the Italian recipe, focaccia. Focaccia is originally made with wheat flour, but also barley flour and more. Not everything we can’t! So here’s a gluten free focaccia recipe to fall on the floor!

It is ideal for a good aperitif with a small glass of wine in summer or a good tea by the fire in winter.

The recipe is not the easiest to make, and requires a lot of ingredients, but believe in Gluten Libre, it’s worth it!

For this gluten free focaccia recipe for 4 people, you’re going to need:

  • 150g rice flour
  • 100g sorghum flour
  • 50g potato starch
  • 1 tablespoon guar gum
  • 1 sachet of gluten-free baker’s yeast
  • 1 sachet of gluten-free baking powder
  • 37cl of water at 40°: respect the temperature.
  • 1 tablespoon of honey
  • 6 tablespoons of olive oil
  • 1 tablespoon of salt
  • Fresh, chopped rosemary
  • Flower of salt and pepper

Let’s do it!

STEP 1: Mix the rice flour, sorghum flour, potato starch, salt, baking powder and guar gum in a bowl.

STEP 2: In another bowl, mix your water at 40°, with 2 tablespoons of olive oil and the baker’s yeast. It will be necessary to let it rest during 10 good minutes, and you will see, the yeast will make foam the whole!

STEP 3: The mixture from Step 2 should then be mixed with the preparation from Step 1. Don’t worry, the result will be a little liquid but this is normal. As long as it is homogeneous, you are on the right way.

STEP 4: Put a towel on the bowl and let stand 2:00 at room temperature.

STEP 5: On a baking sheet, put some baking paper and 2 tablespoons of olive oil, then pour the dough over it. Spread the dough evenly on the baking sheet.

STEP 6: With a clean, humid finger, make a few holes in the dough to give some air during cooking.

STEP 7: Sprinkle with 2 tablespoons of olive oil, coarse salt, rosemary and pepper.

STEP 8: Preheat your oven to 200° and bake for 35 to 40 minutes. Do not touch for 15 minutes when ready, until it cools down!
