I’m a big fan of buckwheat, and I also love salty breakfasts, quick to make and super good! So I wanted to try a gluten-free buckwheat pancakes recipe that really takes a few minutes in the morning.
This recipe is sugar free, so perfect for those starting a sugar free diet or for diabetics!
Perfect for a morning where you don’t have too much time to enjoy a good breakfast!

For 4/5 gluten free buckwheat pancakes you will need :
- 100 g buckwheat flour
- 1 egg
- 10 cl of milk with or without lactose
- 2 cl of water (may be more according to your desire. You’ll understand!)
- A pinch of baking soda for a nice leavening of your dough during baking.
- 1/2 teaspoon of salt
STEP 1: Mix all the ingredients in a bowl with a whisk. You will see, nothing simpler than this recipe.
STEP 2: Let it rest for about 30 minutes, time to take a shower or read a book! After 30 minutes, the dough should have thickened to make pancakes instead of french crepes. If it seems too thick, then do not hesitate to add a few drops of water.
STEP 3: On a hot pan with butter (preferably salted), brown a spoonful of your gluten free buckwheat pancake batter. 1 min on each side, et voilà!
Nothing very complicated, right? You can either accompany them with chocolate, coconut and blueberry as on the picture, and for a salty version, it’s delicious with a bit of avocado, bacon and some figs! Yes, yes, figs give a great taste with gluten free buckwheat pancakes!
